Procedure

  1. Peel and mash the boiled eggs in a bowl.
  2. Add light mayo, stevia, vinegar, minced garlic, salt, and pepper. Mix well until creamy.
  3. Spread butter on both slices of whole wheat bread.
  4. Toast the bread in a pan over medium heat until golden brown.
  5. Choose your serving style:
    • Sandwich: Place a lettuce leaf on one slice of toasted bread, spread the egg mixture evenly over it, add sliced tomatoes, and cover with the second slice of bread.
    • Toast: Place a lettuce leaf on the toasted bread first, then spread the egg mixture over it, and top with sliced tomatoes. Serve open-faced.
  6. Slice (if making a sandwich) and serve immediately.
