Tortang Talong

Procedure

  1. Prepare the eggplant by roasting it over an open flame or on a pan until the skin is charred and soft. Once it’s cool enough to handle, peel off the charred skin, keeping the stem intact. Flatten the peeled eggplant using a fork, making sure it stays whole.
  2. Heat the oil in a pan and sauté the diced tomato until soft and lightly caramelized. Set aside.
  3. In a bowl, beat the egg and season with salt and pepper to taste. Mix in the sautéed tomato.
  4. Dip the flattened eggplant into the egg mixture, making sure it’s coated with the egg and tomato.
  5. In the same pan, heat a little more oil if necessary, and fry the coated eggplant on both sides until golden brown and the egg is fully cooked.
  6. Serve the tortang talong drizzled with catsup, and enjoy!
